Veeramachaneni Diet Ridgegourd Egg Fry Recipe

Beerakaya Egg Fry(Ridgegourd Egg Fry) Ingredients

Ridgegourd(beerakaya)-1 cup

Boiled eggs-3, water- 1/2 cup

butter -1,  Tbsp coconut oil-1 Tbsp

mustard seeds-1/2 tsp , cuminseeds-1/4 tsp

onion- 1/2 finely chopped, green chillies-2

turmeric powder-1/2 tsp ,chillipowder-1 tsp

coriander powder-1/2 tsp &  Salt as per your taste

curryleaves – few,  Coriander leaves finely chopped (optional)

Preparation Method

Boil the eggs . Heat a pan and add butter. Add a pinch of turmeric powder,chillipowder and salt.Mix well. Add the egg pieces and shallow fry on both sides.Keep them aside.

Heat a vessel and add coconut oil. Add mustard seeds,cumin seeds and curryleaves. Add greenchillies. Add chopped onions and saute them well. Add the ridgegourd pieces ,a pinch of turmeric powder and salt.Mix well. Cover and cook for 3 minutes. Open the lid and add water if necesaary. Fry well in medium flame. Add half spoon of coriander powder and chilli powder and mix well.

Add salt if necessary. Add the boiled eggs and mix carefully. Cook for 1 minute in medium flame. Garnish with coriander leaves and switch off the flame.

Delicious beerakaya egg fry is ready to serve.
