Gingergarlic Paste-4 Tablespoons
Biriyani Masala Powder Ingredients
Blend Cinnamon Sticks,cloves,cardamom,shajeera,
Star Anise,jathi Pathri,nutmeg ,fennel Seeds Together.
Keep the Masala Powder Ready.
Clean the Chicken Pieces.
Add Half a Teaspoon Turmeric,
2 Teaspoons Chillipowder,salt and 1 Tablespoon Ginger Garlic
Paste,4 Tablespoons of Curd,few Mint Leaves,biriyani Masala Powder
And Vegetable Oil.
Marinate This and Refrigerate This for Atleast 5 Hours.
Making Onion Masala
Heat a Pan.
Add 2 Tablespoons of Oil.
Add 1 Teaspoon of Fennel Seeds.
Let It Splutter.
Add Thinly Sliced Onions and Saute Them.
Add Green Chillies and Saute Again.
Fry Onions Till Salt.
Add 3 Teaspoons of Chilli Powder.
Add the Biriyani Masala Powder and Saute.
Add 1 Tablespoon of Gingergarlic Paste and Saute Till the Raw Smell Goes.
Add Few Mint Leaves and Coriander Leaves and Mix Well.
Switch Off the Flame.
Soak the Basmati Rice for 30 Minutes to 1 Hour.
Drain the Water and Keep Ready.
Here 7 Glasses of Rice Is Taken.
With the Same Measuring Cup in Which Rice Is Taken ,pour 7 Glasses of Water.
Add the Whole Spices (Blend Cinnamon Sticks,cloves,cardamom,shajeera,
Star Anise,jathi Pathri,nutmeg ,fennel Seeds).
Put the Salt Required for the Rice.
Add 1 Teaspoon of Ghee and Mix Well.
Close the Lid and Cook Till the Rice Is 50% Done .
At This Stage All the Water Is Absorbed .
Here Water and Rice Are in 1:1.
Dum Biriyani Layer Setting
Heat the Vessel in Which We Are Setting the Dum Biriyani.
Add 2 Tablespoons of Oil or Ghee.
Simmer the Flame.
Add the Marinated Chicken to the Vessel and Spread It.
On Top of It Add Some Onion Masala and Layer.
To This Add Half the Quantity of the Half Cooked Rice and Spread It.
Layer Some Onion Masala and Coriander Mint Leaves on It.
Add the Remaining Rice on Top of This.
Add 1/4th Cup Water to the Bowl in Which Chicken Is Marinated and Pour on Top of Rice.
Add 2 Tablespoons of Curd.
Finally Add Some Coriander-mint Leaves and Finish the Layering.
Prepare Some Dough With Maida .
Place the Dough Around the Vessel
Close the Lid and Seal It Tight .
Cook It in Slow Flame for 30 Minutes.
Remove the Dough and Open the Vessel.
Mix Some Saffron in Warm Milk and Pour Into the Biriyani.
Gently Mix the Biriyani and Serve It Hot.
Yummy Hyderabadi Dum Biriyani Is Ready.
