Malabar Special Chicken Curry With Fresh Masala


Chicken-4 Kgs Cut Into Medium Curry Pieces
Gingergarlic Paste-5 Tablespoons
Coconut Oil-4 Tablespoons
Turmeric-2 Teaspoons
Chillipowder-4 Tablespoons
Kashmiri Chilli-2 Tablespoons
Garammasala-2 Teaspoons(for Marination)
Coriander Powder-2 Teaspoons
Onions-5 to 6
Tomatoes-2 to 3
Coconut Pieces-half Cup(Thinly Sliced)
Cashew Nuts-2 Table Spoons
Fresh Cream-4 Tablespoons
Curry Leaves
Coriander Leaves

For Whole Garam Masla Powder(Dry Roast)

Fennel Seeds-2 Teaspoons
Shajeera-2 Teaspoons
Peppercorns-1 Tablespoon
Star Anise-2
Cinnamon Stick-4 Small
Nutmeg Seed-1 Half
Cloves-5 to 6
Coriander Powder-2 Tablespoons


Wash the Chicken Pieces Well.
Marinate the Chicken With Turmeric Powder,kashmiri Chilli,chillipowder,gingergarlic Paste,garam Masala Powder and Required Salt.
Close the Lid and Keep This for Atleast 1 Hour.
Slice 5 to 6 Medium to Big Size Onions Into Thin Slices.
Grind Ginger Garlic Paste.
Dry Roast the Whole Garam Masala Ingredients for 2 to 3 Minutes.
Stir Carefully Not to Burn the Ingredients.
Nice Aroma Starts Coming From the Masala.
Add 2 Tablespoons of Coriander Powder.(if You Have Coriander Seeds,you Can Add Them Along With the Other Ingredients.)
Mix Well and Switch Off the Flame.
Allow It to Cool.
Make a Fine Powder of These in a Blender.
Take 2 Tomatoes and Chop It.
Heat the Vessel.
Add Coconut Oil.
Add Thinly Sliced Coconut(Raw) Pieces ,cashewnuts and Fry .
To This Add Sliced Onions and Saute Well.
Add 1 Tablespoon of Ginger Garlicpaste.
Add Some Salt and Fry Them Till Onions Are Transparent.
Add Curry Leaves and Saute Well.
Add the Tomatoes and Mix Well.
Pour Some Water and Cook the Onion Tomato Mixture.
Once This Is Cooked Add 1 Tablespoon Chilli Powder,1 Teapoon Coriander Powder and Half a Teaspoon Turmeric Powder.
Mix Well.
Fry This Till Oil Comes Out.
Add the Marinated Chicken Pieces to This and Mix Well.
Add Required Salt.
Add Some Water for the Chicken Pieces to Cook.
Mix Well Add Some Curry Leaves and Close the Lid.
Cook This Till the Chicken Pieces Are Cooked Soft.
This Will Take Around 15 to 20 Minutes.
Open the Lid and Check the Pieces Are Cooked Properly.
Add the Freshly Prepared Blended Masala Powder and Mix Well.
Close the Lid and Cook for Another 2 to 3 Minutes.
The Masala Flavour Should Blend Well With the Chicken Pieces.
Open the Lid.
Add Some Fresh Cream to the Curry Mix Well.
Add Salt if Required at This Stage.
Mix for 2 Minutes and Add Coriander Leaves.
Switch Off the Flame.
Yummy Malabari Chicken Curry Is Ready to Serve.
This Goes Excellent With Rotis,kerala Poratta,rice Etc.
