How to Make Brinjal Home Made Curry

Brinjal Curry


Brinjal-1 Cup Chopped Into Thin Slices
Onion-1 Finely Chopped
Ginger Garlic Paste-1 Teaspoon
Jaggery(Powdered)-1 Teaspoon
Curry Leaves-few
Green Chillies-2 Slit Lengthwise
Coconut Milk-1/4 Cup
Turmeric-1/4 Teaspoon
Chillipowder-1 Teaspoon
Coriander Powder-1/2 Teaspoon


Heat Oil in a Kadai.
Squeeze Out the Water From Brinjal and Fry Them in Batches.
Keep Them in a Paper Towel.
Remove the Extra Oil From the Pan.
Keep 1 Tablespoon of Oil.
When Oil Is Heated Add Mustard and Fenugreek Seeds.
Add Curry Leaves and Onion
Saute Well
Add Green Chillies
When Onions Are Transparent Add Ginger Garlic Paste.
Saute Till Raw Smell of Gingergarlic Paste Is Gone.
Add Turmeric,chilli and Coriander Powders and Saute Well.
Add the Fried Brinjal Pieces and Mix Well.
Add 1 Glass of Water Required for the Gravy.
Add 1 Tablespoon of Tamarind Extract.
Add the Required Salt.
Mix Well and Allow to Boil.
Add Little Bit of Jaggery Powder to This.
Check the Gravy and Add Water Accordingly.
Adjust Salt.
Bring the Curry to a Nice Boil in Medium Flame.
After 2 to 3 Minutes Simmer the Gas.
Add the Coconut Milk and Give a Nice Stir.
Cook the Curry for Another 2 Minutes and Switch Off the Flame.
Delicious Brinjal Curry Is Ready to Serve.
Serve This With Hot Rice.
